2019 CSA Week 5 Recipes

This week we’ve got a nice balance of fresh and earthy flavors from fennel to beets to frisee endive, a member of the (bitter & highly nutritious) chicory family. Below we’ve included a French recipe for endive which is the most common way to prepare the greens. Endive is also perfect in soups (such as Italian wedding soup) or sauteed with beans or garlic and a splash of vinegar.  We hope the fresh flavors this week brighten your day! 2019 CSA Week 4 Recipes

We’re loving that school’s out for summer because for the past two weeks 3/4 of our farm crew have been working full time over their summer break. We’ve transplanted a TON of crops including beans, okra, winter squash, field tomatoes, peppers, and eggplant, so all of these veggies will be in abundance over the next few months. This week we harvested the first of our summer squash and zucchini. Tomatoes, peppers and eggplant from our high tunnels will be just around the corner. We’re still loving all the spring greens which have great flavor this time of year. Enjoy the spring veggies while they last and have a great week!

2019 CSA Week 3 Recipes
We’re not the type to complain about mother nature’s abundance but this past month’s rainfall has kept some fields pretty soggy around here. Luckily most of our gardens have great drainage and our primary crops are planted in the best locations. Soon enough more fruiting crops will begin producing for us and you’ll be seeing things from the squash and tomato families. This week we included some beautiful beets which are a two for one- delicious roots and greens. The greens are rich and delicious especially cooked, such as in the recipe below.
