Cucumber Salad

Skin and thinly slice the cucumber. Dice 1/4 cup green onions. Toss cucumbers, and green onions with 1/2 cup white wine vinegar, 1/2 water, 1 tsp salt, and 1/2 tsp ground black pepper. Chill, allowing flavors to blend, then serve at room temperature.

Heat 2 teaspoons unsalted butter in a large pan over medium-high heat. When butter has melted, add all the snap peas, tossing them around in the pan to coat in the butter, Season with salt, pepper and cayenne (if using) and sauté until the snap peas are crisp-tender, about 4-5 minutes.

Transfer to a serving bowl; season with extra coarse salt and pepper to serve.

Spiced Pepper and Eggplant

Cut all the peppers into 2x1" pieces. Dice 1 eggplant (or 1/2 eggplant if very large) into 1/2" cubes. Mince 3-4 cloves of garlic and dice 1/2 onion.

In a large skillet, heat 4 Tbsp olive oil and add onion, garlic, 3/4 tsp coriander, and 3/4 tsp cumin. Cook for about 4 minutes, then add peppers and eggplant with salt and pepper to taste. Reduce heat slightly, and cook, tossing occasionally, until vegetables are tender, about 15-20 minutes. Remove from heat and add 2 Tbsp red wine vinegar. Optional: toss in 2 Tbsp finely chopped basil or parsley. Serve as a side to pork chops or flank steak, or chop and fold into couscous, pasta or rice. Can be served with a dollop of Greek yogurt.

garlic scape pizza Pizza with Caramelized Onion

To make quick pizza dough combine 2 1/2 cup bread flour, 1/2 tsp salt, 1 tsp sugar, 1 cup water, 2 Tbsp olive oil, 2 1/4 tsp active dry yeast. Mix dough and allow to rise for 30 minutes.

Chop all the garlic scapes. Chop all the red onions into strips. Add 1 Tbsp cooking oil to a skillet, then add onion and garlic scapes and saute until caramelized and fragrant, then set aside.

After the dough has risen, punch dough down, then form into a round or square pizza dough, and spread over an oiled cooking sheet or pizza stone. Top pizza crust with a thin layer of pizza sauce, then add a thin layer of mozzarella cheese. Add a thin sprinkling of Parmesan cheese along the perimeter of the crust. Arrange caramelized onions evenly across the pizza.

Bake in a 450F oven for 20 minutes, or until the crust becomes golden brown.

Golden Beet Salsa

Lightly peel all of the golden beets. Bring a pot of water to a boil, then either blanch the beets in the water for 1 minute, or steam the beets covered above the water in a colander until fork tender. Dice the beets once they have cooled. Dice 1 green pepper, and 1/2 white or red onion. Dice 1/2 jalapeno pepper. Finely chop 2 oz of cilantro. In a bowl combine beets, green pepper, onion, jalapeno pepper, cilantro, and 1 tsp salt. Add 2 tbsp lime juice or white vinegar, and 2 tsp honey. Toss salsa, then allow flavors to blend for several hours and enjoy with chips.
